We first tried CaJohns Bourbon Infused Chipotle-Habanero Hot Sauce at ZestFest 2009 in Fort Worth, TX.The first thing we noticed before we tried it was the shape of the bottle. It's not your standard 5oz hot sauce bottle. It looks more like something you'd pick up at the liquor store. Once we tasted the sauce we knew why.
This is a complex sauce. First off, it is fairly sweet and tangy for a hot sauce. This is not surprising since brown sugar is the first ingredient. The best thing about this sauce though, is the way that the chipotle, the habanero and the bourbon combine. On the front side you have the earthy, smoky flavors of the chipotle. The heat of the Red Savina Habanero gives this sauce a nice kick on the back end too. But the most interesting thing about this sauce is the way the bourbon ties everything together. On top of the whole tasting experience you get this little hint of bourbon that works incredibly well with the other flavors. Perhaps it is the smoking process of the chipotles combining with the wood flavors from the cask aging of the bourbon. The brown sugar and bourbon combination is also very nice.
We give this sauce a 6/10 for heat. Use this sauce anywhere you'd use a standard chipotle sauce. It also works well as a table sauce for barbecued meats, especially when you want to turn up the heat from most barbecue sauces and rubs.
